Alongside Dosa, other rice-based dishes like Idli, Appam, and Pitu also find mentions in these texts. While the Tamil Dosa was traditionally thicker and softer, the thinner, crispier version we know today likely originated in Udupi, Karnataka. A detailed recipe for Dosa even appears in the 12th-century Sanskrit encyclopaedia Manasollasa, compiled by Someshvara III.

While traditional recipes use rice and black gram soaked overnight and fermented, some roadside eateries and restaurants have resorted to using chickpea flour and semolina for instant dosas. These versions often appear pale yellow and lack the rich nutrients of the traditional recipe.
