While the Tamil Dosa was traditionally thicker and softer, the thinner, crispier version we know today likely originated in Udupi, Karnataka. A detailed recipe for Dosa even appears in the 12th-century Sanskrit encyclopaedia Manasollasa, compiled by Someshvara III.
